- 1/2 c. self-rising flour
- 1 1/2 c. low-fat buttermilk
- 3 egg whites
- 2 tsp. liquid oil
Directions

1Preheat oven to 450°.

2Place cornmeal with flour in a mixing bowl.

3Add buttermilk and beat well.

4Add egg whites and oil; mix well.

5Coat muffin tins with a nonstick spray and fill 2/3 full. Bake for 15 to 25 minutes.
