  • 6 to 7 large potatoes, diced
  • 1 medium onion, chopped
  • 1 tsp. salt
  • dash of pepper
  • 1 can corned beef
  • Bisquick mix

Directions

    Cook the potatoes, onion, salt and pepper in water until tender.

    Drain.

    Mix in the corned beef that has been broken apart with a fork.

    Put into a baking dish.

    Mix a double batch Bisquick rolled biscuits and place them on top of potato mixture.

    Bake at 450° for 15 minutes until biscuits are golden.
