  • 2 Tablespoons Olive Oil, Plus More If Necessary
  • 4 whole Tilapia Fillets
  • 1/2 cups Cornmeal
  • 1/2 teaspoons Salt
  • 1/2 teaspoons Pepper
  • 2 Tablespoons Fresh Parsley, Minced
  • 1 whole Lemon, Zested (reserve The Remaining Lemon To Slice Into Wedges For Serving)

Directions

    Heat olive oil in a medium skillet over medium heat.

    On a shallow plate, combine cornmeal, salt, pepper, parsley, and lemon zest.

    Dredge tilapia fillets in the cornmeal mixture.

    Cook fillets in the hot oil, 2 at a time, about 3 minutes on the first side and 1-2 minutes on the second side.

    Remove the cooked fillets to a paper towel lined plate.

    (Add additional olive oil to the pan if necessary when you cook the remaining 2 fillets).

    Slice the lemon into wedges and serve with tilapia.
