- 1/2 c. cornmeal
- 1 c. flour
- 1 tsp. salt
- 1 1/2 c. water
- 1 egg
Directions

1Heat griddle to 425°.

2Mix dry ingredients together.

3Add most of water and blend well to make a paste.

4Add remaining water and egg; beat well.

5Spoon batter onto (dry) griddle with a large mixing spoon or ladle.

6Immediately spread out in a circular motion from center out.

7Lift edges when able.

8Turn when light brown.

9Cook on second side until edges ruffle.

10Cool on rack. Refry with Crisco.

11For soft shell, fry briefly each side.

12Hard shell, fry briefly one side, fold in half; fry each side.
