- 3 lb. frying chicken (pieces)
- 1/3 c. flour
- 1 Tbsp. salt
- 1/4 tsp. pepper
- 1/4 c. shortening
- 1 c. chopped onion
- 1 c. chopped green pepper
- 1 minced garlic clove
- 1 1/2 c. water
- 14 oz. ketchup
- 2 tsp. curry powder
- 1/2 tsp. ground thyme
Directions

1Coat chicken with mixture of flour, salt and pepper.

2(Skin chicken.)

3Brown in shortening.

4Remove from pan.

5Add onions, peppers and garlic clove.

6Saute until brown.

7Add water, ketchup, curry and thyme; mix well.

8Add chicken, coating each piece. Cover and bake one hour, stirring occasionally, at 350°.

9Serve over rice.

10Add almonds as garnish.
