Ingredients
- 2 medium garlic cloves, peeled
- 1 small onion, peeled and quartered
- 1 lb. boneless raw veal, chicken or other poultry, cut into 1-inch cubes
- 1/2 lb. raw bacon, cut into 1-inch pieces
- 1 lb. smoked ham, cut into 1-inch cubes
- salt
- pepper, freshly ground
- 2 large eggs
- 2 Tbsp. brandy
Directions

1Preheat oven to 400°.

2Insert metal blade into food processor. Drop garlic through feed tube.

3When finely chopped scrape bowl and add the onion, veal or poultry and bacon.

4Process until very smooth, about 3 1/2 minutes, stopping to scrape the bowl.

5Add remaining ingredients.

6(Caution with salt since bacon and ham may be salty.)

7Process until ham is finely chopped, approximately 45 seconds.

8Pack mixture firmly into 5 1/2 cup loaf pan.

9Bake until top is nicely browned and meat has pulled away from sides, 45 to 60 minutes.

10If browning too fast, cover with aluminum foil.

11Drain off liquid and let cool.

12Refrigerate until well chilled.
