- 2 oz. olive oil
- 10 oz. spinach leaves without stems
- 12 oz. jumbo lump crabmeat
- 8 oz. Ricotta cheese
- 1 whole egg
- 10 oz. butter
- 8 sheets phyllo dough
- 1/2 medium chopped onion
- salt, pepper and nutmeg
Directions

1Saute onions in olive oil, until golden brown.

2Add cleaned spinach, salt, pepper and nutmeg; toss lightly.

3Remove from heat; spinach should remain wilted.

4When cold, add crabmeat, Ricotta cheese and one egg.

5Mix well without breaking the crabmeat.

6Lay out 2 stacks of 4 layers phyllo dough, side by side.

7Place mix on top and roll dough, while brushing it with melted butter.

8Place on buttered sheet pan and bake for 30 to 35 minutes at 375°. Serve with boiled potatoes and remaining melted butter.

9Garnish with dill or chives.

10Serves 5 to 7 persons.
