Cranberry Apple Filled Bars

  • 1 cup all-purpose flour
  • 1 cup uncooked quick cooking oats
  • 1/2 cup firmly packed brown sugar
  • 1/2 teaspoon baking soda
  • 1/2 cup cold Land O Lakes Butter, cut into chunks
  • 1 cup sweetened dried cranberries
  • 1/2 cup sugar
  • 1/4 cup cranberry-apple juice
  • 2 medium (2 1/2 cups) apples, peeled, cored, chopped
  • 2 tablespoons orange marmalade
  • 1 teaspoon cornstarch

    Heat oven to 350F.

    Combine flour, oats, brown sugar and baking soda in bowl; cut in butter with pastry blender or fork until mixture resembles coarse crumbs.

    Press two-thirds crust mixture evenly onto bottom of lightly greased 11x7-inch glass baking dish.

    Bake 10-15 minutes or until puffed.

    Combine cranberries, sugar, cranberry-apple juice and apples in 2-quart saucepan.

    Cook over medium heat, stirring occasionally, 5-6 minutes or until mixture is thickened.

    Stir together orange marmalade and cornstarch in bowl.

    Gradually stir into hot fruit mixture.

    Continue cooking, stirring occasionally, 1-2 minutes or until mixture boils and is thickened.

    Spread fruit mixture over hot, partially baked crust.
