Ingredients
- 2 c. all-purpose flour
- 1 c. quick Quaker oats
- 3/4 c. sugar
- 2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt (optional)
- 3/4 c. orange juice
- 2 eggs
- 1/2 c. vegetable oil
- 1 Tbsp. grated orange rind
- 3/4 c. chopped cranberries
- 1/2 c. chopped nuts (optional)
Directions

1Heat oven to 350°.

2Grease and flour bottoms of 9 x 5-inch loaf pan.

3Combine first 6 ingredients.

4Mix well and set aside. Beat orange juice and orange peel and eggs until well mixed.

5Add to dry ingredients. Mix just until moistened.

6Fold in cranberries and nuts and pour into prepared pan.

7Bake 60 to 70 minutes or until a wooden pick comes out of center clean.

8Cool 10 minutes, then remove from pan.

9Cool thoroughly before cutting.
