  • 2 tablespoons 2% low-fat milk
  • 2 ounces Spam
  • 1 small onion, finely chopped

    lightly beat eggs and milk.

    saute onion and spam.

    fry egg mixture a little over medium to low heat, pulling in edges to keep egg from pooling.

    when very little egg is still liquid, add onion and spam to one side, then fold remaining egg over it.

    heat omelette a minute more and slide onto plate.

    consume immediately.
