- 3 gal. sour milk
- 1 1/2 c. sour cream
- 1/2 c. melted butter
- 1 Tbsp. salt
- 1 tsp. soda
Directions

1Heat milk to 115° and cook 1/2 hour.

2Strain through cloth and squeeze out whey. Add soda and butter; let stand 2 hours.

3Add 1 cup cream and set in pan of boiling water.

4Beat lumps out. When smooth, add 1/2 cup cream and salt.

5Put into buttered glass dish. Let set 5 days.

6If not used in another 5 days, cover with melted paraffin.
