Creamed Spinach Ring Recipe

  • 2 (10 ounce.) pkg. frzn minced spinach
  • Grated Parmesan cheese
  • 4 tbsp. butter
  • 1/2 c. minced onion
  • 1 c. light cream
  • 1 teaspoon salt
  • 1/2 teaspoon sugar
  • Dash of pepper
  • Dash of nutmeg
  • 4 Large eggs
  • 1/2 c. fresh bread crumbs (2 slices)
  • 1/3 c. grated Swiss cheese

Directions

    Cook spinach as label directs; drain very well.

    Preheat to 350 degrees.

    Grease a 4 1/2 c. ring mold well and dust with grated Parmesan cheese.

    In large saucepan, saute/fry onion till tender, about 5 min.

    Add in spinach, cream, salt, sugar, pepper and nutmeg; heat just to boiling and remove from heat.

    In large bowl, beat Large eggs slightly.

    Add in bread crumbs and cheese; gradually stir in spinach mix.

    Turn into prepared mold.

    Set mold in baking pan and pour boiling water into pan 1 1/2 inches deep.

    Place waxed paper over top of mold.

    Bake 30 to 35 min or possibly till knife comes out clean.

    Loosen mold around edge with spatula and invert onto plate.
