- 3 slightly beaten eggs
- 2 c. light cream
- 1/4 c. granulated sugar
- 1/4 tsp. vanilla
- 1/4 tsp. salt
- 1/2 c. brown sugar
Directions

1In a heavy 2-quart saucepan, combine the beaten eggs, light cream, sugar and salt; cook and stir over medium heat about 10 minutes, or until custard coats a metal spoon.

2Remove from heat; cool at once by placing pan in the sink or a bowl of ice water, stirring 1 to 2 minutes.

3Stir in vanilla.

4Pour into

5a 1-quart casserole dish.

6Refrigerate at least 2 hours.

7Press brown sugar through a sieve over the custard.

8Set the casserole in a pan of ice cubes and cold water.

9Broil 4 to 5 inches from heat for 1 or 2 minutes or until sugar turns golden brown and a bubbly crust forms.

10Serve warm or chilled.
