- 6 skinned catfish or 6 other fish
- 12 cup evaporated milk
- 1 tablespoon salt
- 1 dash pepper
- 1 cup flour
- 12 cup yellow cornmeal
- 2 teaspoons paprika
- 12 slices bacon
Directions

1Clean, wash and dry fish.

2Combine milk, salt and pepper.

3Combine flour, cornmeal and paprika.

4Dip fish in milk mixture and roll in flour mixture.

5Fry bacon in a heavy pan until crisp.

6Remove bacon, reserving fat for frying fish.

7Drain bacon on absorbent paper.

8Fry fish in hot fat for 4 minutes.

9Turn carefully and fry for 4 to 6 minutes longer or until fish is brown and flakes easily when tested with a fork.

10Drain on absorbent paper.

11Serve with bacon.
