Crockpot Thai Chicken

Ingredients

  • 2 -3 lbs chicken, skinned
  • 1 red bell pepper
  • 1 onion, chopped
  • 12 cup chicken broth
  • 14 cup soy sauce
  • 1 tablespoon cumin
  • 3 garlic cloves
  • 12 teaspoon red chili pepper flakes
  • 1 teaspoon salt
  • pepper, to taste
  • 2 tablespoons cornstarch
  • 23 cup creamy peanut butter
  • 1 tablespoon soy sauce
  • 14 cup lime juice
  • 14 cup cilantro, chopped
  • 3 green onions, chopped
  • 12 cup roasted peanuts, chopped

Directions

    Place Chicken, Bell pepper and Onion in Crockpot.

    Mix soy sauce, broth and spices together.

    Pour mixture over Chicken.

    Cook on high for 3 hours.

    Whisk Peanut butter, starch, 1 Tablespoon of Soy sauce and lime juice together.

    Add 1 cup of juices from crock pot and mix until smooth.

    Stir mixture into crock pot.

    Cook 30 minutes more.

    Garnish with cilantro, green onion and peanuts.
