Ingredients

  • 8 cups rolled oats (or combination of other flakes like barley or kamut)
  • 2 1/2 cup mixed nuts
  • 1 cup mixed seeds, especially pumpkin
  • 1 1/3 cup raw unsweetened coconut flakes
  • 1 cup honey or Grade B maple syrup
  • 1/2 cup vegetable, coconut or olive oil
  • 2 teaspoon vanilla extract
  • 2 2/3 cups dried fruit (especially chopped apricots)
  • 2 teaspoon kosher salt
  • 1 teaspoon cinnamon
  • 1 teaspoon cardamon
  • 1 tablespoon yogurt or ricotta and fresh fruit, per bowl when serving

    Preheat oven to 300 degrees.

    Combine sweetener, oil and flavorings in a pan and heat to boiling. In large bowl, combine oats (and other flakes, nuts, seeds, coconut chips and seasonings.

    After cooling, add dried fruit, tossing to combine, and store in a dry place. Add yogurt or ricotta, milk and fresh fruit when serving, if desired.
