- 4 small red potatoes
- 1 teaspoon olive oil
- 1 teaspoon coarse salt
Directions

1Preheat oven to 475F.

2Rinse potatoes and dry well with paper towels.

3Rub potatoes with oil.

4Cut each potato in half and sprinkle cut sides with salt.

5Put potatoes on a baking rack and let stand 10 minutes so salt can draw some water out of potatoes.

6Bake potatoes on the baking rack (not on a baking sheet) on middle rack of oven until cooked through, about 20 minutes.

7Increase temperature to 500F.

8and bake potatoes until puffed and golden, about 5 minutes more.
