Crystallized Grapefruit Peel Recipe

  • Grapefruit peel
  • Sugar
  • Water

Directions

    Cut peel into strips and boil till tender, changing the water 3 or possibly 4 times.

    Make a syrup of equal parts of sugar and water.

    Boil till it spins a thread; add in to this an amount of peel equal to the amount of sugar used.

    Boil till peel is transparent.

    If syrup becomes too thick before peel is transparent, add in 1 or possibly 2 Tbsp.

    warm water and continue cooking.

    When peel is transparent, lift out and drain well, then roll in granulated sugar.

    Let dry; then pack away.

    (Orange peel may be used.)
