Ingredients

  • 7 lb. cucumbers
  • 1 c. lime
  • 1 gal. water
  • 1 c. vinegar
  • 1 Tbsp. alum
  • 1 bottle red food coloring
  • 2 c. vinegar
  • 2 c. water
  • 10 c. sugar
  • 3 sticks cinnamon
  • 3/4 pkg. red hots, melted

    Peel

    core cucumbers;

    slice into rings or sticks. Soak in lime

    24 hours. Drain and soak in ice water 3 hours. Drain and put in mixture of vinegar, alum and coloring with enough water to cover.

    Simmer 2 hours;

    drain and throw away liquid. Mix the vinegar and remaining ingredients. Heat to

    boiling point.

    Pour over cucumbers and let set 24 hours. Drain;

    save liquid.

    Pack pickles in jars; bring liquid to a boil and pour over pickles.

    Seal.
