- 1 (16 oz.) can plum tomatoes
- 1 chopped onion
- 2 cloves garlic, minced
- 1 1/4 tsp. ground cumin
- salt and pepper
- 1 Tbsp. plus 1 tsp. oil
- 1/4 tsp. red pepper flakes
- 1 egg, lightly beaten
- 1 1/2 lb. ground beef
- 1 c. dry bread crumbs
- 2 1/2 Tbsp. milk
- 1 bunch fresh coriander
Directions

1Puree the tomatoes with their liquid in a food processor. Saute onion, garlic, 1/4 teaspoon cumin and 1/2 teaspoon salt in 1 tablespoon oil until onion is soft.

2Add tomato puree and red pepper flakes.

3Simmer over low heat partly covered (about 30 minutes).
