- 1 recipe plain pastry
- 4 slightly beaten Large eggs
- 1/2 c. sugar
- 1/4 teaspoon salt
- 1/2 teaspoon vanilla
- 1/8 teaspoon almond extract
- 2 1/2 c. scalded lowfat milk
- Nutmeg
Directions

1Refrigerate9-inch pie shell while making filling.

2Blend Large eggs, sugar, salt, vanilla and almond extract.

3Gradually stir in scalded lowfat milk.

4Pour into chilled unbaked pie shell.

5Sprinkle with nutmeg.

6Bake in warm oven (400 degrees) 25-30 min.

7Pie is done when knife inserted halfway between outside and center of custard comes out clean.

8Remove from oven.

9Set on cooling rack 15-30 min, then refrigeratein refrigerator.
