- 12 lb salmon, sushi-grade
- 2 sheets nori
- 12-1 cup rice, nishiki (optional)
- soy sauce
- lemon
- wasabi
Directions

1Rinse rice in water and prepare in a sauce pan or rice cooker with 2 cups of water.

2Prepare Sushi Rice Mix (Optional): mix together rice vinegar, sugar and salt in a saucepan in low to medium heat until mixture is clear.

3When rice has cooked, transfer to a non-reactive bowl and pour sushi rice while stirring rice.

4Cut Salmon into 1/4 by 1 1/25 inch thick slices.

5Cut Nori into 1x3 inch pieces.

6For Dip: Mix soy sauce and lemon (and wasabi if preferred).

7Serve Rice, salmon, and nori and soy sauce dip separtely for guests to assemble on their own.
