  • 12 lb salmon, sushi-grade
  • 2 sheets nori
  • 12-1 cup rice, nishiki (optional)
  • soy sauce
  • lemon
  • wasabi

Directions

    Rinse rice in water and prepare in a sauce pan or rice cooker with 2 cups of water.

    Prepare Sushi Rice Mix (Optional): mix together rice vinegar, sugar and salt in a saucepan in low to medium heat until mixture is clear.

    When rice has cooked, transfer to a non-reactive bowl and pour sushi rice while stirring rice.

    Cut Salmon into 1/4 by 1 1/25 inch thick slices.

    Cut Nori into 1x3 inch pieces.

    For Dip: Mix soy sauce and lemon (and wasabi if preferred).

    Serve Rice, salmon, and nori and soy sauce dip separtely for guests to assemble on their own.
