  • 1 bay leaf
  • 1 T olive oil
  • 1 c red lentils (can sub others)
  • 2 t curry powder
  • 1 t tumeric
  • 3 cups veg stock (+)
  • 1 c chopped sweet potato (+)
  • 1/2 red pepper chopped
  • 1/2 c coconut milk
  • 2 c chopped spinach

    -1- Fry onion, garlic ginger & bay leave

    -2- Add lentils, curry, tumeric - fry 2 min

    -3- Add stock, potato, pepper, milk

    cook 30 min stirring occasionally

    -4- Add spinach and cook for 2 min more
