Ingredients

  • daikon, cut into eating pieces (enough for 1 gal.)
  • 2 c. sugar
  • 1/2 c. vinegar
  • 1/3 c. table salt (I use Hain sea salt)
  • yellow coloring (optional)

Directions

    Boil sugar, vinegar and salt together. It will be very thick. Add coloring.

    When lukewarm, pour over daikon.

    Leave out
  4. 4
    for a few hours, shaking the jar occasionally. Store in refrigerator.
