- daikon, cut into eating pieces (enough for 1 gal.)
- 2 c. sugar
- 1/2 c. vinegar
- 1/3 c. table salt (I use Hain sea salt)
- yellow coloring (optional)
Directions

1Boil sugar, vinegar and salt together. It will be very thick. Add coloring.

2When lukewarm, pour over daikon.

3Leave out

4for a few hours, shaking the jar occasionally. Store in refrigerator.
