  • 3/4 c. water
  • 1/4 c. shortening
  • 1 (8 oz.) pkg. chopped dates
  • 3/4 c. chopped walnuts
  • 2 eggs, beaten
  • 1/2 tsp. vanilla
  • 1 1/2 c. flour
  • 3/4 c. sugar
  • 1 1/2 tsp. baking soda
  • 1/2 tsp. salt

Directions

    In a small saucepan bring water and shortening to a boil; pour over dates in bowl.

    Stand for 15 minutes.

    Stir.

    Add nuts, eggs and vanilla.

    In a small bowl, combine flour, sugar, soda and salt.

    Stir into date mix.

    Pour into a greased and floured 9 x 5-inch loaf pan.

    Bake at 350° for 65 to 70 minutes.

    Cool in pan 10 minutes.
