  • 1 egg white
  • 1 unbaked pie crust
  • 3/4 c. all-purpose flour
  • 1/2 c. packed brown sugar
  • 1/3 c. white sugar
  • 1/4 c. chilled margarine, cut into 6 pieces
  • 6 c. sliced peaches

    Beat egg white until foamy.

    Brush over the bottom and sides of pastry.

    In a small bowl combine flour and sugars.

    Cut in margarine until mixture resembles fine crumbs.

    Sprinkle 2/3 into bottom of pastry.

    Top with peaches.

    Sprinkle with remaining crumb mixture.

    Bake at 375° for 40 to 45 minutes or until filling is bubbly and peaches are tender.
