- 1 c. quick cooking oats
- 2 Tbsp. sugar
- 1 tsp. salt
- 1 1/2 c. skim milk
- 1 tsp. lemon juice
- 1 c. all-purpose flour
- 2 tsp. baking powder
- 2 eggs, slightly beaten
- 1/4 c. vegetable oil
Directions

1Combine oats, flour, sugar, baking powder and salt in mixing bowl.

2Make a well in the center.

3Combine egg, milk, oil and lemon juice.

4Pour into well and stir just until moistened.

5Pour batter by 1/4 capfuls onto a lightly greased, hot griddle.

6Turn when bubbles form on top.

7Cook until second side is brown.

8Makes 6 servings.
