  • 2 lb. carrots, cooked crisp-tender, about 7 minutes
  • 1 large green pepper
  • 1/4 c. minced onion
  • 2 Tbsp. salad oil
  • 1/2 c. vinegar
  • 2 c. tomato juice
  • 1 tsp. dry mustard
  • 1/3 c. dry granulated artificial sweetener

    Combine green peppers, onions and carrots. Bring all other ingredients to a boil.

    Pour over carrots. Refrigerate.
