- 3 eggs, separated
- 1/4 tsp. salt
- 3/4 c. drained cottage cheese
- 1/4 c. sifted flour
- 1 Tbsp. butter
Directions

1Beat egg whites until stiff but not dry.

2Beat egg yolks with salt until thick; add cottage cheese and flour, mixing lightly. Fold in egg whites.

3Melt half the butter in skillet or on griddle.

4Drop batter by spoonfuls onto skillet.

5Brown lightly on both sides.

6Add remaining butter as needed.

7Serve with maple or fruit sauce.
