- 1 c. yellow cornmeal
- 1/4 c. buttermilk
- 1/3 c. sugar
- 1 1/2 tsp. baking powder
- 1/4 c. Egg Beaters
- 1/4 c. light corn syrup
- 1 (8 oz.) can cream-style corn
- 1/2 c. flour
- 1/2 tsp. baking soda
- 1 tsp. salt
- 1 (4 oz.) can green chilies
- 1 (7 oz.) can Mexicorn
Directions

1Mix cornmeal with buttermilk; let stand.

2Stir flour, baking powder, baking soda and salt; stir in Egg Beaters, corn syrup, chilies and Mexicorn.

3Mix until just blended.

4Grease or spray 12-cup muffin tin.

5Bake at 400° for 15 to 20 minutes.
