Dry Bean Soup

  • 2 1/2 lb. ham bone
  • 4 qt. cold water
  • 1 large onion
  • 1 tsp. pepper
  • 1 Tbsp. dried celery leaves
  • 2 c. beans, soaked overnight
  • 2 carrots (medium-sized), diced
  • 3 large potatoes

Directions

    Put ham bone, pepper and water in a large pot.

    Add beans and cook slowly for 2 hours.

    Add onion, carrots and celery leaves. Cook slowly for 1 hour.

    Add potatoes.

    When potatoes are done, soup is ready to serve.

    (Dry or split peas may be used instead of beans.)
