- 2 1/2 lb. ham bone
- 4 qt. cold water
- 1 large onion
- 1 tsp. pepper
- 1 Tbsp. dried celery leaves
- 2 c. beans, soaked overnight
- 2 carrots (medium-sized), diced
- 3 large potatoes
Directions

1Put ham bone, pepper and water in a large pot.

2Add beans and cook slowly for 2 hours.

3Add onion, carrots and celery leaves. Cook slowly for 1 hour.

4Add potatoes.

5When potatoes are done, soup is ready to serve.

6(Dry or split peas may be used instead of beans.)
