- 1/2 c. chopped green pepper
- 1/4 c. chopped onion
- 1 clove garlic, minced
- 1/2 tsp. dried basil, crushed
- 1/2 tsp. dried rosemary, crushed in 2 Tbsp. hot olive oil or cooking oil
- 2 c. water
- 1 c. regular rice
- 1 c. chopped, peeled tomato
- 1 tsp. salt
- 1/8 tsp. pepper
Directions

1Cook the first five ingredients until vegetables are tender. Stir in remaining ingredients.

2Cook, covered, over low heat, until rice is done, about 20 minutes.
