Ingredients

  • 1/2 c. chopped green pepper
  • 1/4 c. chopped onion
  • 1 clove garlic, minced
  • 1/2 tsp. dried basil, crushed
  • 1/2 tsp. dried rosemary, crushed in 2 Tbsp. hot olive oil or cooking oil
  • 2 c. water
  • 1 c. regular rice
  • 1 c. chopped, peeled tomato
  • 1 tsp. salt
  • 1/8 tsp. pepper

Directions

    Cook the first five ingredients until vegetables are tender. Stir in remaining ingredients.

    Cook, covered, over low heat, until rice is done, about 20 minutes.
