  • 1 pound sausage
  • 4 tbsp. minced onion
  • 4 tbsp. minced bell pepper
  • 6 Large eggs
  • 1/2 c. lowfat sour cream

Directions

    Brown sausage, onions and bell peppers in skillet.

    Drain.

    Line baking dish with 3/4 of the sausage mix.

    Combine Large eggs and lowfat sour cream, season to taste and pour over sausage mix.

    Bake at 350 till Large eggs are semi-set.

    Stir egg mix and top with remaining sausages.

    Bake till Large eggs are hard.

    Serves 4-6.
