  • 4 cups frozen mixed vegetables
  • 4 cups rotini pasta, uncooked
  • 3 Tbsp. balsamic vinegar
  • 8 cups fresh chopped spinach leaves
  • 32 fl oz (4 cups) drinking water

Directions

    Preheat oven to 350F.

    Place a sheet of foil in the center of a baking sheet; place cod on foil.

    Rub olive oil and lemon juice into cod; top with vegetables.

    Wrap foil tightly and place in oven for 20-30 min., or until cod flakes easily with a fork.

    Cook pasta according to package instructions.

    Serve alongside equally divided cod and vegetables.

    Sprinkle vinegar over spinach leaves; season if desired.
