- 12 oz. fresh or frozen cod fillet (thawed, if frozen) King Sooper's 1 lb For $7.99 thru 02/09
- 3 Tbsp. extra virgin olive oil

- 4 cups frozen mixed vegetables
- 4 cups rotini pasta, uncooked
- 3 Tbsp. balsamic vinegar
- 8 cups fresh chopped spinach leaves
- 32 fl oz (4 cups) drinking water
Directions

1Preheat oven to 350F.

2Place a sheet of foil in the center of a baking sheet; place cod on foil.

3Rub olive oil and lemon juice into cod; top with vegetables.

4Wrap foil tightly and place in oven for 20-30 min., or until cod flakes easily with a fork.

5Cook pasta according to package instructions.

6Serve alongside equally divided cod and vegetables.

7Sprinkle vinegar over spinach leaves; season if desired.

8Divide into 4 equal servings.
