Easy Cheese Potatoes

  • 2 lb. pkg. frozen hash browns or O'Brien potatoes, partially thawed
  • 16 oz. sour cream
  • 2 c. shredded Colby/Monterey Jack cheese
  • 1 can cream of potato soup or mushroom soup
  • 1/2 can milk
  • chopped onion and pepper (add if not using O'Brien potatoes)
  • 2 c. corn flakes (for topping)
  • 1/4 c. butter, melted

Directions

    Mix all ingredients together.

    Put into a 9 x 13-inch pan. Crush 2 cups corn flakes and pour evenly over potatoes.

    Drizzle with 1/4 cup melted butter.

    Bake at 350° for 1 hour.

    Serves 6 to 8.
