- 1 envelope unflavored gelatin
- 1 c. cold water
- 2 (8 oz.) pkg. softened cream cheese
- 1/2 c. sugar
- 1 (9-inch) graham cracker crust
- 1 tsp. vanilla (optional)
Directions

1In a small saucepan, sprinkle gelatin over 1/4 cup cold water; let stand 1 minute.

2Stir over low heat until gelatin is completely dissolved.

3In a large bowl, beat cream cheese, sugar and vanilla until blended.

4Gradually put in gelatin mixture and remaining water until smooth.

5Pour into crust and chill until firm.

6Garnish with fruit if desired.

7(Okay to use light cream cheese; can use artificial sweetener instead of sugar.)
