- 4 eggs
- 2 c. sugar
- 1 large lemon, chopped coarsely (leave rind on; remove seeds)
- 1 stick margarine
- 2 unbaked pie shells
Directions

1Place eggs, sugar, margarine and lemon in blender.

2Whip until well blended.

3Divide in 2 pie shells.

4Bake at 350° for 35 minutes.

5This recipe will make 12 tarts using the small tart shells.
