  • 4 eggs
  • 2 c. sugar
  • 1 large lemon, chopped coarsely (leave rind on; remove seeds)
  • 1 stick margarine
  • 2 unbaked pie shells

Directions

    Place eggs, sugar, margarine and lemon in blender.

    Whip until well blended.

    Divide in 2 pie shells.

    Bake at 350° for 35 minutes.

    This recipe will make 12 tarts using the small tart shells.
