- 1 c. corn meal
- 1 c. milk
- 1/2 tsp. baking soda
- 1 c. Mexicorn
- 2 eggs
- 1/2 c. vegetable oil
- 1 c. grated Cheddar cheese
- 1 medium onion, chopped
Directions

1Mix dry ingredients and stir well.

2Mix milk, beaten eggs and vegetable oil together.

3Add dry ingredients and milk mixture together with Mexicorn and mix.

4Stir in cheese.

5Add onion.

6Make sure mixture is stirred together.

7Pour in hot greased skillet. Bake at 350° for 40 minutes.
