Easy Stuffed Peppers

Ingredients

  • 1 large onion, finely chopped
  • 1 lb. brown and serve turkey sausage
  • 1 c. grated light variety Cheddar cheese
  • 2 Tbsp. oil (Heart Beat) or 1 Tbsp. olive oil
  • 1/2 c. seasoned bread crumbs
  • 1 to 2 egg whites, beaten
  • 4 green, red or yellow bell peppers, halved and cleaned

    Preheat oven to 350°.

    Blanch the peppers and set aside.

    In large skillet, saute the onion in oil until softened.

    Add sausage; saute until browned.

    Remove skillet from the heat; add bread crumbs, cheese and egg whites and mix well.

    Cut peppers lengthwise, then stuff with sausage mixture.

    Place into baking dish; bake for 20 to 25 minutes.

    Yield: 4 servings.
