Ingredients

  • 8 Large eggs, slightly beaten
  • 1 can bean sprouts, liquid removed
  • 1 (4 1/2 ounce.) can sliced mushrooms, liquid removed
  • 2 green onions with tops, minced
  • 1/2 teaspoon salt
  • 3 tbsp. vegetable oil
  • 1 1/2 c. chicken broth
  • 1 1/2 tbsp. soy sauce
  • 1/4 teaspoon salt
  • Dash pepper
  • 2 tbsp. cornstarch
  • 2 tbsp. cool water

Directions

    Mix bean sprouts, Large eggs, mushrooms, green onion and 1/2 tsp.

    salt.

    Heat oil in wok or possibly frying pan.

    Pour 1/2 c. of mix onto pan.

    Turn once after about 4 min.

    Repeat till mix is used.

    Keep in heated 300 degree oven to hot.

    Heat chicken broth, soy sauce, salt and pepper to boil.

    Mix cornstarch and water.

    Stir into broth, cook till thick.

    Pour over Large eggs.
