  • 1/2 cup extra-virgin olive oil
  • 4 cloves garlic peeled, smashed, minced
  • 1/4 cup lemon juice freshly squeezed
  • 1 teaspoon lemon zest
  • 1 teaspoon anchovy paste high-quality
  • 1/2 teaspoon sea salt Celtic or Himalayan
  • 1/4 teaspoon pepper fresh
  • 1/2 teaspoon dijon mustard grainy
  • 1/4 cup grated Parmesan cheese or nutritional yeast

Directions

    Add garlic to olive oil and let sit for 1 hour.

    Whisk in mustard, anchovy paste, lemon zest. Pour in lemon juice to taste and add salt, pepper and parmesan cheese (or nooch).

    Whisk and pour cautiously over greens immediately before serving. Don't drown the poor fellows!
