  • 3 egg whites
  • 1/4 yellow squash chopped
  • 1 garlic scape
  • 1/4 orange pepper chopped
  • 1 1/2 tablespoons cheese grated parmigiana
  • 1 tablespoon olive oil
  • 1/8 teaspoon italian seasoning

Directions

    Crack 3 eggs and separate the egg whites from the egg yolks and gently beat the egg whites

    Wash the pepper and squash and chop 1/4 or each along with a garlic scape or garlic clove.

    Put olive oil in pan and when heated add the egg whites

    Once the egg whites start to cook, add the veggies
  5. 5
    Grate the parmigiana cheese over the omelette along with the Italian seasoning

    Once egg whites are nearly fully cooked, using a spatula fold 1/2 the omelette over and cook for a minute and remove from stove.

    Serve with salsa
