- 3 egg whites
- 1/4 yellow squash chopped
- 1 garlic scape
- 1/4 orange pepper chopped
- 1 1/2 tablespoons cheese grated parmigiana
- 1 tablespoon olive oil
- 1/8 teaspoon italian seasoning
Directions

1Crack 3 eggs and separate the egg whites from the egg yolks and gently beat the egg whites

2Wash the pepper and squash and chop 1/4 or each along with a garlic scape or garlic clove.

3Put olive oil in pan and when heated add the egg whites

4Once the egg whites start to cook, add the veggies

5Grate the parmigiana cheese over the omelette along with the Italian seasoning

6Once egg whites are nearly fully cooked, using a spatula fold 1/2 the omelette over and cook for a minute and remove from stove.

7Serve with salsa
