- 1 3/4 cup flour (I use all purpose)
- 2 tsp baking powder
- 1/2 tsp salt
- 1/2 tsp ground nutmeg
- 1/2 tsp cinnamon
- 1 cup sugar
- 2 tbsp dark rum
- 5 large egg yolks
- 3/4 cup milk
- 2 tsp vanilla extract (I use extra)
- 1/2 cup (1 stick) unsalted butter, softened
Directions

1Preheat oven to 350F.

2Grease and flour a 9 X 5 X 3 inch loaf pan.

3Combine the flour, baking powder, salt, and spices in a small bowl.

4Using an electric mixer on low speed, beat the sugar, butter, rum, vanilla, and egg yolks in a large bowl for 60 seconds, scraping the bowl frequently.

5Increased the speed to high and beat for 5 minutes, scraping the bowl occasionally.

6Reduce the speed to low and mix in one third of the flour mixture, alternating with the milk until just combined.

7Pour the batter into the prepared pan.

8Bake for 50 to 60 minutes, or until a toothpick inserted in the center comes out clean.

9Cool in the pan for 10 minutes.

10Remove from the pan and cool completely.
