- 1 large eggplant
- 2 c. crackers, crushed
- 1 small onion, chopped
- 4 oz. Cheddar cheese, grated
- 2 eggs
- 1/2 stick oleo
- 1 c. milk
Directions

1Peel and cut eggplant into large cubes.

2Cook until tender. Drain well.

3Add beaten egg.

4Stir well.

5Add crackers, onion, cheese, oleo and milk.

6Salt and pepper to taste.

7Pour in greased casserole.

8Bake at 350° for 30 minutes.
