- 1 medium eggplant, peeled and sliced
- 1 1/2 lb. ground beef
- 1/2 jar spaghetti sauce
- 1/2 c. Parmesan cheese
Directions

1Wash eggplant; peel and slice.

2Brown ground beef in skillet and drain well.

3In shallow baking dish, spread small amount of spaghetti sauce mixture on bottom; alternate layer of eggplant then sauce, ending with sauce.

4Last sprinkle Parmesan cheese on sauce.

5Bake at 350° for 30 minutes or until eggplant is tender when pierced with fork.
