  • 1 to 2 small eggplants
  • 2 Tbsp. butter
  • 1/2 c. onion, chopped
  • 1 can tomatoes or 5 small chopped fresh tomatoes
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 2 c. cornbread crumbs
  • 1/2 c. milk
  • 1/4 lb. grated Cheddar cheese
  • 1 stick oleo

Directions

    Peel and saute eggplant in 2 tablespoons butter until tender. Drain and mash.

    Mix in order given.

    Pour in a baking dish.
