  • 1 eggplant, peeled, diced and boiled 6 to 7 minutes
  • 1/3 c. milk
  • 1 can cream of mushroom soup
  • 1/2 c. chopped onion
  • 3/4 c. herb stuffing mix (Pepperidge Farm)
  • grated cheese

Directions

    Stir all

    together except eggplant.

    Drain eggplant and add to mixture.

    Put in greased glass dish and top with grated cheese. Bake at 350° for 30 minutes.
