- 1 eggplant
- 3 beaten eggs
- 1 large chopped onion
- 3/4 lb. pork sausage
- 1 c. dry bread crumbs
- 1/2 c. buttered cracker crumbs
Directions

1Pare eggplant; cut into 1-inch cubes.

2Cook in small amount of water until tender (cook until all water is absorbed).

3Brown sausage and onion; add with eggs and bread crumbs to partially cooled eggplant.

4Stir together and put into a greased baking dish.

5Cover with the 1/2 cup of buttered cracker crumbs and bake 30 minutes at 350°.
