  • 3 small eggplant
  • 1 lb. lean ground meat
  • 1/2 c. chopped celery
  • 1 onion, chopped fine
  • 1 clove garlic, chopped fine
  • 1 Tbsp. dried parsley
  • 1/2 c. milk
  • 1/2 c. Progresso bread crumbs
  • 1/2 c. grated Cheddar cheese
  • 1/2 c. grated Mozzarella cheese
  • 1/4 c. Parmesan cheese

Directions

    Peel and cube eggplant.

    Boil until tender.

    Drain.

    Saute onion, garlic, parsley, celery and meat until the meat changes color.

    Add eggplant, milk and cheese.

    Mix well.

    Pour in baking dish and top with bread crumbs.

    Bake in 350° oven for 30 to 35 minutes.
