- 3 small eggplant
- 1 lb. lean ground meat
- 1/2 c. chopped celery
- 1 onion, chopped fine
- 1 clove garlic, chopped fine
- 1 Tbsp. dried parsley
- 1/2 c. milk
- 1/2 c. Progresso bread crumbs
- 1/2 c. grated Cheddar cheese
- 1/2 c. grated Mozzarella cheese
- 1/4 c. Parmesan cheese
Directions

1Peel and cube eggplant.

2Boil until tender.

3Drain.

4Saute onion, garlic, parsley, celery and meat until the meat changes color.

5Add eggplant, milk and cheese.

6Mix well.

7Pour in baking dish and top with bread crumbs.

8Bake in 350° oven for 30 to 35 minutes.
