- 1/4 c. vegetable oil
- 1/4 tsp. garlic salt
- 1 (15 oz.) can tomato sauce
- 1/3 c. grated Parmesan cheese
- 2 c. shredded Mozzarella cheese
- 1/3 c. all-purpose flour
- 1 medium eggplant, cut into 1/2-inch slices
- 1/2 tsp. dried oregano
Directions

1Heat oil in skillet until hot.

2Mix flour and garlic salt; coat eggplant in this mixture.

3Cook over medium heat until golden brown, turning once.

4Pour half of tomato sauce into an ungreased 13 1/2 x 9 x 2-inch baking dish.

5Add eggplant and Parmesan cheese.

6Pour remaining tomato sauce over eggplant; sprinkle with oregano and Mozzarella.

7Bake at 350° for 25 minutes or until hot and bubbly.
